One of the characteristics
of the Domaine du Noble is the winemaking and maturing: the fermentation as
well as the ageing takes place in the barrel (from 18 to 24
months).![]() The barrels were chosen with care after tests were made with different types of wood and various coopers. The American oak "marks the wine too much" which means that the wine keeps a wooden taste. Therefore, we returned to the French oak which exchanges its components with the wine more slowly. |
